In order to celebrate #WorldPastaDay, let’s debunk some false myths about one of the most favorite dishes of the world. 1. "Pasta makes you fat”. No it does not, normally. It depends how you prepare you pasta. It is true that many Italians still today eat pasta every day and do not gain weight(at least not from their pasta). If you bomb your pasta with tons of cream, cheese, heavy meats and god knows what else, and eat THAT every day, yes it’ll make you fat, and probably cardiopathic too. However, that’s not how pasta is normally consumed in Italy by families. On normal days, the dressing of pasta is simple, sometimes only with one vegetables, such as sautéed zucchini, or other veggies with a little parmesan or pecorino grating. And no one eats carbonara everyday. 2. “There’s a lot of garlic in pasta dishes”. No! The garlickiest pasta that there is the Roman “ajo ojo”, garlic and oil. And as you can guess, in that case garlic is one of the 3 ingredients of the dressing, plus chilly and extravirgin olive oil. 3. “Drain the pasta dry/ Little cooking water is more than enough/ the water don’t need to be boiling”. No, no and NO! In order to get the best out of your pasta, you need a lot of water, it must come to boil THEN be seasoned with salt. You may add a couple of drops of oil to the water for fresh pasta, but dry pasta doesn’t need it. Pasta leaves a lot of starch in its cooking water that makes it essential for creating creamy dishes. Don’t be scared of using it. 4. “Pasta is pasta, shapes and names don’t matter”. Nope. The shape of the pasta changes its cooking time, its texture and taste. Different sauces should be used with the pasta shape that goes best. Also brands and manufacturers matter. The same reason that makes a pack of artisan pasta more expensive than a supermarket store brand. 5. “Al dente is a gourmet thing. You can cook pasta as long as you want”. Please don’t! Almost all pastas on the planet now having cooking time on their packages. And only the biggest, bulkiest pasta shapes should be cooked up to 13/14 minutes. Normal spaghetti shouldn’t require more than 5/6 minutes. A properly cooked pasta is easy to digest and more delicious.
