So the Italian nostalgia finally took over, and I made a BIG pot of spaghetti with bolognese sauce. ? I was quite skeptical, since I don't trust supermarket mince meat (or ANY meat not minced right before my very eyes, reason why I almost never order anything with mince meat in it). I started with a very generous amount of soffritto — finely chopped onion, celery, carrot and garlic, then did my best with all the canned, puréed and fresh tomatoes that I found. We're lucky we have pots of fresh basil; that with a glass of red wine and a lot of time did the trick. For the ingredients that I had, my bolognese sauce turned out more than decent. There was no parmesan, but I found grana padana cheese, no complaints there. The spaghetti quality was beyond repair though and went straight from raw to over cooked. All that said, this bowl of #pasta made one hell of a lunch/supper (what's a meal at 5 PM called?).
