one prolific basil plant in the garden has produced a bounty of sweet tender green leaves so I’ve been keeping busy putting away jars of pesto these last few days

the key to a really good pesto is to start with really good quality ingredients & after hunting for a long time for a truly lovely olive oil I can say that @cobramestateusa is my very favorite and and has become our house go-to. This olive oil shines in just about everything - I love its herbaceous almost tomato flavor - and it melds so well with the sweet basil, rich pecorino and nutty pinenuts .

The last few seasons I’ve also tested many pesto recipes and my favorite has to be the one in @alicelouisewaters “the art of simple food” - it’s perfectly balanced and has the best texture - I love a scoop swirled through salads now or pulled from the freezer on a cold January night for a bowl of steaming spaghetti and memories of another season .
