Lots of you asking for the recipe from my stories last night so ...... PWPANTRY ASIAN SOUP:

INGREDIENTS (Serves 2):
1 x Pack of Raw Prawns
2 x Gel Chicken Stock
1 x Can of Coconut Milk
2 Tb spn Fish Stock
3 Tb spn Soy Sauce
1/2 Chillies - depending how you like it!
Fresh Lemongrass (or big squeeze from tubes)
1 Red Onions (Thinly Chopped)
2 Garlic Bulbs (or dash of squeezy tube)
2 Red Peppers
1 Large Chunk of Fresh Ginger (peeled and grated)
Green Vegetables e.g. Pak Choi / Sugar Snaps / Long Stem Broccoli / Baby Corn.
Rice Noodles (optional)
Fresh Coriander
1 Lime for squeezing
Fry the onion, Chillies, chopped ginger & garlic in a frying pan with olive oil. Meanwhile in a separate big saucepan, boil water and add a few cups to the stock, with the coconut milk, soy, fish sauce & lemongrass. Let it slowly simmer and add the cooked onion & garlic when soft. Stir and slowly simmer. Add your noodles to soften for 3 minutes, then finally all the extra veg & noodles and let them simmer for 4 minutes. Lovely to serve slightly al dente. Serve with fresh Chillies, coriander & Lime.
