Jay Fai - Legendary street food at the hands of a veteran chef
"When some Thai celebrities took me out for a meal, rather than an air-conditioned restaurant, they opted for a standard Thai eatery. Jay Fai uses rich ingredients, but unlike a restaurant, the flavours aren’t prepared especially for foreign customers. This kind of Thai cuisine shouldn’t be disturbed by an air conditioner. There's a fried crab curry, but I'm happy just having the Thai-style fried eggs with crab."
「タイのセレブたちにご飯に連れて行ってもらうと、意外にも涼しいクーラーで冷えてるレストランじゃなくて普通のタイ料理食堂だった。リッチな材料を使うけど、味はレストランみたいな外人向けの味じゃない。クーラーの冷たさに邪魔されないこの感じがタイ料理だ。蟹カレー炒めもあるけど、僕はカニが入ったタイ風の卵焼きとご飯だけで幸せです。」
