"The éclair is a big trend in London right now, it's the new macaroon. For this éclair I used Madagascan Vanilla, it's the best vanilla in the world and the only one I use. The aroma that you get from one single pod is really sweet and the sign of good quality. It's very important when I'm creating a dish that the final end product is the best it can be.
