The Novy Svet Winery is a small, yet leading, sparkling-wine manufacturer in Crimea producing about 2 million bottles a year, ranging from sweet to brut. Founder Prince Lev Golitsyn constructed the tunnels below sea level, where the wine ages at the necessary 8-12 degrees celsius for three years. Employees still turn the wine manually during the aging process.
