We like to keep it real at @Simple Green Smoothies! These are our late night Saturday snack from @rockinmomskitchen!

Almond Chocolate Chunk Cookies
1 cup almond butter or any nut butter you have on hand
1 cup brown sugar or coconut sugar
1 egg (or chia seed substitute)
1 teaspoon baking powder
1/2 cup chocolate chips

Preheat oven to 350 degrees. Beat together almond butter, brown sugar, egg and baking powder with a hand mixer until smooth. Stir in chocolate chips by hand. Place big spoonfuls of dough onto a baking sheet and cook for 10-15 minutes. I like mine a little on the underdone side so I’m around the 10 minute mark. Cook them just until they’re golden brown. Let cool on a cooling rack and enjoy! These keep well in an airtight container for a couple of days.
