Happy Belated Midsummer's Eve to Elsa! "It's finally Midsummer's Eve today! We celebrate with friends and start the day by picking flowers and make wreaths to place on the maypole where traditional ring-dances will take place.

For lunch we eat new potatoes with herring, fresh dill, soured cream and chives. For fika hubby has made a merengue cake that we will fill with whipped cream and strawberries and my homemade rhubarb curd. During the day we play games and sing songs, drink schnapps and of course fika again, preferably after a swim in the cold lake. Hubby and I have made a dark chocolate cake to warm us all. And of course later in the evening we have a barbecue like thousands of other Swedes have on this special day. Hubby has made a yummy ice cream cake with blueberries and white chocolate for dessert!
Midsummer's Eve is thought to be magical so Elsa is going to pick seven different kind of flowers and lay under her pillow tonight. Her future spouse may appear to her in a dream! Glad midsommar! Happy Midsummer!" writes @belliewin.
